Dominio do Bibei is a bottled piece of land framed in a landscape. The winery was started by a group of people whose origins are located there and life has brought them back to the origin. The team is made up of Gutier, Suso, Quino, Alín, Xoán, Javier, María, Nachoand Merche, Each and every one of them is in-charge of working, interpreting and transmitting the soil of the Dominio do Bibei.
Winemaking: ELABORATION: manual harvest, slow fermentation between 12ºC and 17ºC. AGING: first part in 600L barrels in Austrian foudres. Second part in stainless steel tanks in contact with their lees.
Organoleptic Characteristics
- Colour: Pale yellow, green and lemony reflections. Clean, transparent and bright.
- Nose and flavour: Nose: complex, intense, terpene character, pear, apple, peach. Floral, acacia, myrtle, chamomile and light balsamic nuances, mint, mint and articulated notes. Mouth: wide, light fat texture, full, enveloping and glyceric, slightly acid, good structure and very long, fruity.
